Zucchini Bread

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 2  cups white sugar
  • 3 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped walnuts

Directions

  1. Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
  2. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
  3. Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
  4. Bake for 50 to 60 minutes, or until toothpick inserted in the center comes out clean. Cool in pan 20 minutes.
  5. Remove bread from pan, and completely cool.

 

Sweet potatoe Pie

Ingredients

•1 (40 oz.) Can Cut Sweet Potatoes in Syrup; drained and smashed
•2 whole eggs
•1 (5 oz.) can evaporated milk
•3/4 cup granulated sugar
•3/4 tsp. pure vanilla extract
•3/4 tsp. salt
•1/3 cup melted  unsalted butter
•1 tsp pumpkin pie spice (or 1/2 tsp. cinnamon and 1/2 tsp. nutmeg)
•1 unbaked  9” deep dish pie crust

Steps to Prepare
1.Heat oven to 350°F.
2.In a bowl combine the sweet potatoes, eggs , egg yolk and evaporated milk and beat smooth.

3.Add sugar, vanilla, salt, butter, and spices; continue to mix until creamy.
4.Scoop mixture into the pie shell (spread evenly) and place in oven
5.Bake for 50 to 60 (or until center has set).
